How to Make the Perfect Thermomix Pizza Dough

When it comes to making pizza dough at home, a Thermomix is the answer. It saves you time and energy, but it also churns out the perfect pizza dough! Let’s explore everything about making the perfect dough, including a Thermomix pizza recipe.

The Thermomix made by Vorwerk has been around since the early 1960’s and has evolved over the past few decades into a very handy, albeit expensive, piece of kitchen equipment.  The last 3 models of Thermomix are the TM31 with a basic digital LCD display and the TM5 & TM6 with full on touch screen displays and guided built in recipes.

We use the Thermomix TM31 to make all of our pizza dough including the recipe in this article. Whilst the kneading function display looks different on the TM5 & TM6 the cooking time and methods are exactly the same.

Ingredients for the perfect thermomix pizza dough

Making your own pizza dough at home will save you money since it costs much less than store-bought pizza, no matter what the toppings. So let’s look at the ingredients needed for the perfect Thermomix pizza dough recipe. 

These following simple ingredients are enough to form 1 x 14 inch pizza base.

  • 2 tsp dried instant yeast
  • teaspoon of salt
  • 400g flour
  • 220g warm water
  • 1 tsp sugar
  • 30g extra virgin olive oil

Begin by heating the yeast and water and sugar for 1 minute at 37 degrees, speed 1. Then add all the other ingredients and mix for 6 seconds, on speed 6. Finally, knead for 2 minutes.

What is the kneading function on the thermomix?

If you are not familiar with Thermomix, we can help you! The kneading function on Thermomix TM31 is the little wheat symbol at the bottom right. Push the wheat button and select 2 minutes on the speed dial which will start the kneading process.

Proofing pizza dough

After 2 minutes, the Thermomix produces your pizza dough, ready for you to proof it. Proofing is the stage in the process where the dough is left to rise. This allows the yeast to ferment, adding flavour and texture to the dough. 

After removing the dough from the Thermomix, roll the dough into a ball on a board dusted with flour. Then place the ball in a lightly oiled bowl, and cover with a clean cooking cloth, towel, or cling wrap. 

For best results, leave the dough to rest for around 8-12 hours at room temperature or below. It is important to know that all doughs can behave differently, so it’s possible to get a good rise in the pizza dough in as little as 30-40 minutes in a warm room.

A quicker proofing will generally result in a less flavoursome, denser pizza base.

To tell if your pizza dough is adequately proofed, poke it with your finger. If it springs back quickly, then it is not proofed enough. You should also notice that it has increased in size and contains air pockets.

How to form the pizza base

You need to get the pizza dough into the shape of a pizza base by using your hands. Ensure the dough is at room temperature before flattening it into a disc.  Use your fingers and palms to flatten out further and stretch it out as far as possible.  Pick the pizza dough up over your palm, flopping it down on the bench repeatedly until it stretches into the desired shape and size.

Try to avoid using a rolling pin for best results.

Can you freeze thermomix pizza dough?

Yes! You can freeze your Thermomix pizza dough in the freezer. Then, merely defrost the dough the next time you decide to have a pizza night. Thermomix pizza dough can also last for up to three days in the fridge. If you store it properly, wrapped in an air-tight or Ziploc bag, it might even last you the whole week.

Which flour is best to use for pizza dough?

The best type of flour for pizza dough is all-purpose flour. The protein and gluten content percentage in an all-purpose flour ensures a crispy pizza crust. Alternatively, Italian pizza flour or type 00 flour is also a great option.

Can you use plain flour for pizza?

You can use plain flour for pizza. But remember that the protein content in pain flour is much lower, so the pizza base’s taste and texture may be a little different from what you are used to.
